Ingredients

  • 4 cups radishes, cubed or diced
  • splash of olive oil
  • 1 cup sour cream (or mayonnaise)
  • ¼ cup dijon mustard
  • 4 eggs, hardboiled and diced
  • 2 tablespoons capers
  • 2 tablespoons parsley, chopped
  • ½ cup red onion, diced (or green onion)
  • ¼ cup dill pickles, chopped (or fresh dill)
  • Juice of 1/2 lemon
  • Salt & pepper, or to taste
